Milk is an essential and inalienable part of our diet. Over the years, most of us have been contemplating the question, of whether we should have raw and pasteurized milk as each one of them has its own benefits. It is the fresh milk taken out straight from the healthy cows, goats, sheep or any other animal which is fed only grass. This milk is unpasteurized and non-homogenized and is the one in which nothing has been added, with all the natural enzymes, minerals & vitamins with all the necessary nutrients present in it. However, it is understood that raw milk has dangerous bacteria which can pose a serious health risk to anyone. It is not good for those with the weak immune systems, pregnant women and even children.

Pasteurization is the process of heating and cooling and was discovered in the 19th century by French microbiologist and chemist Louis Pasteur to make milk safe for drinking. This type of milk also comes from healthy cows, goats & sheep, but is heated and then cooled. Various researches have shown that this process destroys the important qualities of milk, such as good bacteria, enzymes and vitamins. There are several ways to pasteurize milk and the heating temperature varies from 145-280 degrees F.

Due to the dangerous pathogens present in raw milk, it is considered less safe than pasteurized milk. In pasteurized milk, there is no scope for such bacteria, as the milk has gone through the process of heating and cooling.

You will be surprised to know that the process of pasteurization changes not just the quality, but the taste of milk as well. While raw milk is fresh & creamier, it has a superior flavour which is not there in the pasteurized milk.

Looking at the whole argument, raw milk is considered healthier than pasteurized milk as it contains all the important nutrients. It has a wide array of probiotics and enzymes which are not there in pasteurized milk.

If we look at the larger picture, raw milk is considered a superfood as compared to pasteurized milk as it contains all the nutrients like vitamins, calcium and iron which get destroyed during pasteurization. It is to be understood that the digestive enzymes are destroyed during the process, which is present in raw milk. All this means that raw milk is easy to digest and can even help in boosting the immune system.
